It is citrusy, sticky, hoppy and delicious. Simply drink it and enjoy it. Don't hoard this beer, Citra Ass Down and drink it now. (Online description:) This is a very hop forward American style IPA. Brewed with Pale, Vienna, Munich and wheat malt for a solid base for all American hops, focusing mainly on the variety "Citra." Citra hops are a relatively new variety introduced in 2008. It was bred as a hybrid of a number of different hops, including Hallertauer Mittelfrüh, U.S. Tettnanger, East Kent Golding, Bavarian, Brewers Gold, and other unknown hops. The resulting hop, Citra, has a distinct citrusy and tropical fruit flavor and aroma. In Citra ass down we used American Columbus for bittering and 11# of Citra at the end of the boil for late kettle addition flavor and aroma. Then we added 6 more pounds Citra and 5# Centennial post fermention for aroma. Rebrewed for your tasting pleasure!

Style: India Pale Ale (IPA) India Pale Ale style well suited for Hemingway-esque trips to the Upper Peninsula. American malts and enormous hop additions give this beer a crisp finish and incredible floral hop aroma. [Note: this beer doesn't have Bells in front of the name by explicit request from the brewer. Update: Larry has posted in the forums saying Bells should be in front of the name now.]

Style: Belgian White (Witbier) "Belgian White Ale" (North America) / "North American Craft Beer" (UK) Brewed with oats for creaminess and spiced with the perfect combination of orange peel and coriander. An unfiltered wheat ale spiced in the Belgian tradition for an uncommonly smooth taste. Gold medalist (white beer) at 1995 World Beer Championships, silver medalist (white beer) at 1996 and 1997 World Beer Championships. 171 calories per 12-ounce serving and 5.4% abv. Editor's Note: Much of this beer's production now comes from the Molson brewery in Toronto. A small portion of Denver draught production comes from the SandLot brewery. Style: Imperial/Double IPA Palate Wrecker was originally brewed for the Hamilton's Tavern 2nd Anniversary celebration. It's the most complicated West Coastinspired IPA we have ever brewedmashing and sparging with hopped wort, in addition to our hop layering regimen for IPA. We use almost 6 lbs/bbl of Columbus and Centennial hops to create this very bitter hop monster (tested at 149 IBU and no extracts in case you were wondering). Style: India Pale Ale (IPA)

Style: Sweet Stout This English style of beer, also known as Sweet Stout or Cream Stout, first appeared in London in the late 1800's. The early brewers touted the health benefits of the milk sugar in this beer which today relates mainly to the increased amount of calories(no real health benefits...sorry). The milk sugar adds a well rounded sweetness to this dark beer and makes it an outstanding, year 'round stout.

Style: Premium Bitter/ESB Sawtooth Ale is an English style Extra Special Bitter. It is an extremely well balanced beer, with significant hop character, medium body, and a maltiness which increases in evidence as the beer warms to its "proper" drinking temperature. . The water used is quite hard, bringing it to near Burton on Trent levels, keeping it true to the style. This gives it the appropriate character and improves the malt extract significantly. 2000 to 2009 vintages - 4.75% abv 2010 vintage - 5.3% abv

Style: Traditional Ale Honey beer with molasses and oats Just cause it's dark and German doesn't mean it's an alt. Based on the obscure Kottbusser style of beer, this surprisingly dry beer retains all the aroma and nuance of honey (from bees) and molasses (not from bees) creating a perception of sweetness through cool, controlled fermentation. Style: Saison Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Style: India Pale Ale (IPA) One of our favorite styles, this ale is a hop explosion. Light in color, heavily hopped in the kettle as well as conditioned with several unique hop varieties. This creates a beautiful floral/citrusy nose which is balanced well by a smooth and full finish.

Style: Schwarzbier Schell's Chimney Sweep is inspired by the rich dark lagers of upper Franconia. Black in color with a rich roasty maltiness, firm hop bitterness, and a subtle underlying smokiness.

Style: Dunkel The perfect beer for people who want a specialty craft beer, but may not want all the flavor and heaviness. Ingredients: Pale 2 Row and Black malts, corn, extract, Cluster hops.

Style: American Dark Lager This all malt, Vienna-style lager is a real crowd pleaser! Roasted malts and imported hops give it a deliciously smooth malt taste backed by a light hop finish. Perfect for any occasion.

Style: German Hefeweizen Schell's Hefeweizen is made with 60% wheat malts and 40% barley malt. We use an authentic wheat beer yeast culture, which gives the beer a fruity ale character dominated by a citrus-like tartness. A slice of lemon is traditionally served with this type of wheat beer. Ingredients: 60% Wheat and 40% Pale malts, domestic Cascade, and Mt. Hood hops.

Style: Altbier A top-fermented, dark ale brewed in the true German style. Made with Pale 2-row, Munich, Caramel, Chocolate and Black barley malts, this is a full-bodied ale that offers great depth. The word 'delicious' doesn't do this beer justice. Now available as a Winter seasonal in November and December.

Style: Premium Lager In a nod to our 19th century brewing traditions, Stag #9 is a dark lager aged in American whiskey barrels stored in the brewery's original, underground lagering caves. Located below the historic brewery, the naturally cooled caverns were originally constructed in the 1860's to facilitate brewing in an era that predated electrical refrigeration. This specialty cave-aged, barrel-aged lager was created as the ninth installment in Schell's Stag Series, a collection of innovative and experimental, limited-edition brews released periodically throughout the year. Dark brown to black in color, the beer has roasted malt notes of dark chocolate, toffee, light oak, char and a hint of vanilla.

Style: Imperial/Double IPA Sure we're abrasive. We were abrasive long before we were Surly. If you visit the brewery you can still see remnants of the industrial manufacturing factory Omar's parents ran for 35 years within those same 4 walls. Bandsaw blades, grinding wheels, and sanding discs came long before ales and lagers. But let's be honest, this is a lot more fun. Pale in color, this over-hopped, under-brewed Double IPA has almost twice the amount of hops & malt crammed in the can. Seasonal between March and April.

Style: Brown Ale This beer is our regular Bender beer with a cold-press coffee-brewing process. We steep 20 gallons at a time, so this beer will pop up at Tours, beer fests and special tappings. The coffee is roasted locally at Coffee & Tea Limited in Linden Hills.

Style: Saison Oh great, a fizzy yellow beer in a can, that's just what the craft beer world needs! CynicAle melds Old World ingredients in a new school style. French malted barley, English oats and Belgian yeast create honey and black pepper flavors. Lively Slovenian hops provide the floral, apricot and peach notes. Toss your doubts away, toss one back and enjoy! 33 IBUs.

Style: Premium Bitter/ESB Surly started with homebrewing in the garage. Doomtree making some noise a basement. Careful what you do in your spare time, man. That stuff just might end up taking over your whole life. A decade later, Doomtree meets Surly. Instant crush. We're both indie and strong-willed. We love Minnesota and we are allergic to focus groups. We don't have a formal professional outfit between us. We convene at the brewery to scheme. Working in extreme secrecy, we decide to make a beer. Team Surly suggests a "bastardized style" that will build on the classic, but buck convention. Doomtree cannot nod vigorously enough. We know this style. Guided by instinct, we came up with this dark, gold, toasty aromatic, subtly spicy, bitter enough, dry-hopped brew. Best enjoy it cold in a spare room with new friends

Style: India Pale Ale (IPA) Like Hops? You'll like this fire-hued beer. This is the beer I have always dreamed of making. This is the beer that would come to mind while spending the last two years tearing down walls, hanging sheetrock, moving kegs, power washing the ceilings, arguing with various agencies, and cutting the water main. Without Golden Promise malt, made by family-owned Simpsons Malt, Furious would just be pissed offed. From Scotland, this malt is still produced in the tradition of turning over the barley by hand, resulting in a malt that is unsurpassed in its quality. Golden Promise is also used extensively by premium whisky distilleries such as The Macallan. This malt provides the backbone for the intense hop character. Four American hop varieties are used at a rate of over three pounds per barrel. The result is a rich malt sweetness infused with bright hop flavor and aroma from beginning to end. Oh yeah, it's about 6% alcohol and around 100 IBUs.

Style: Brown Ale Brown Session Ale. A celebration of our new Prospect Park location, next to the Witch's Hat Water Tower, this is a sessionable brown ale with house roasted cardamom, aged on toasted Ash.

Style: Wheat Ale Some breweries use honey in their wheat beer to allow them to use less malt and therefore create a much lighter beer. We think that's a waste of good ingredients. We start with a standard American Style Wheat Beer (wheat malt flavor, low bitterness) and then add 1.2 gallons of honey per barrel to the kettle at the end of the boil. The result is a full malty flavor accompanied by cinnamon notes from the honey and the complex flavors that come from fermenting that much honey. This is far and away our best selling beer.
